This site started with a simple frustration: too many online recipes that read beautifully and fail in a real kitchen. Vague temps, “cook until done”, ingredient lists that don’t match the steps. So I made a rule for myself: nothing gets published here until it has worked in my own kitchen — more than once.
How Recipes Get Tested
- Real equipment: a regular home oven, ordinary pans, a $15 instant-read thermometer. No restaurant gear.
- Exact numbers: every recipe states temperatures, times, and doneness cues — because “medium heat for a while” isn’t a recipe.
- Repeat runs: if a dish behaves differently on the second attempt, I keep testing until I know why, and the fix goes into the Pro Tips.
- Honest storage advice: each recipe tells you how it keeps, freezes, and reheats — tested, not guessed.
