Hot Honey Glazed Salmon

I keep a jar of hot honey in the fridge now, and it’s this recipe’s fault. It became a Tuesday-night rotation in about two weeks.

The magic is the tension between sweet and heat. You steep honey with chili flakes and butter, then paint it onto salmon seared hard enough to crisp the edges.

Twenty-five minutes, one pan, zero fuss.

Pull the salmon just shy of done — it keeps cooking on the plate. Overcooked salmon is a tragedy.

Ingredients

  • 4.0 salmon fillets (6 oz each), skin-on, patted dry
  • ⅓ cup honey
  • 2.0 tbsp unsalted butter
  • 3.0 garlic cloves, minced
  • 1.0 tsp red pepper flakes
  • 1.0 tbsp soy sauce
  • 1.0 tbsp olive oil
  • 1.0 lemon, halved
  • fresh thyme leaves

Method

  1. Make the hot honey. Melt butter, add garlic and chili flakes, cook 30 seconds. Stir in honey and soy sauce; simmer 2 minutes.
  2. Dry the salmon. Pat very dry; season with salt and pepper.
  3. Sear skin-side down. 4 minutes over medium-high, without moving it.
  4. Flip & glaze. Spoon hot honey over; cook 2–3 minutes more.
  5. Rest & serve. Squeeze lemon, scatter thyme, spoon over the glaze.

Notes

The glaze also loves chicken thighs and roasted carrots. Skin not crisping? Pan wasn’t hot enough or fish wasn’t dry enough.
