Ingredients
- 2.0 large chicken breasts, sliced in half lengthwise
- 8.0 oz fettuccine
- 1.0 cup heavy cream
- ¾ cup finely grated parmesan
- ½ cup sun-dried tomatoes in oil, chopped
- 4.0 garlic cloves, minced
- ½ cup chicken broth
- 1.0 tsp Italian seasoning
- ½ tsp red pepper flakes
- 2.0 tbsp olive oil
- fresh basil, torn
Method
- Cook the pasta. Boil until just shy of al dente. Reserve a mug of pasta water.
- Sear the chicken. Season with salt, pepper and Italian seasoning; sear 4 minutes a side.
- Build the sauce. Add garlic and sun-dried tomatoes, cook 60 seconds, scraping up brown bits. Add broth, cream and pepper flakes; simmer 3–4 minutes.
- Finish the sauce. Stir in parmesan off the heat until glossy.
- Bring it together. Slice chicken, return to pan with pasta, toss until coated.
- Serve. Pile into bowls with basil and extra parmesan.
Notes
Reheats well with a splash of water or milk. For a lighter version, swap half the cream for pasta water plus extra parmesan.
