Ingredients
- 6.0 Persian cucumbers
- 2.0 tbsp chili oil with crisp
- 1.0 tbsp soy sauce
- 1.0 tbsp rice vinegar
- 1.0 tsp toasted sesame oil
- 2.0 garlic cloves, grated
- 1.0 tsp sugar
- 1.0 tbsp everything bagel seasoning
- 1.0 tsp toasted sesame seeds
Method
- Smash the cucumbers. Whack with a rolling pin until cracked; cut into rough chunks.
- Salt & drain. Toss with salt, sit 10 minutes, squeeze lightly.
- Whisk the dressing. Chili crunch, soy, vinegar, sesame oil, garlic, sugar.
- Toss & rest. Let it sit 15–20 minutes before serving.
- Finish. Scatter bagel seasoning and sesame seeds; serve cold.
Notes
Best eaten the same day. Not a fan of heat? Use mild chili oil or olive oil with paprika.
